Today was pretty uneventful, but still awesome. Hubby has not been feeling well, and actually slept until 4pm! Me and the girls played The Walking Dead most of the morning. Pretty great game, it has a lot of cussing, but nothing worse than what my kids hear me say. After Alex woke up, I made homemade chicken noodle soup. It was actually really easy and the kids loved it!
To get started, I turn my favorite playlist on the playstation before I start my cleaning/cooking routine every night. I’m a country girl at heart! Ben loves his country music too!
So after we got that out of our system, we started cooking. Well actually, I poured myself a drink first… Deep Eddy Sweet Tea Vodka with water.
The chicken noodle soup that I made is super easy. I don’t have an actual recipe, but just season it to your liking and you will be fine!
The Players:
Chicken Noodle Soup Seasoning from HEB
1 Chicken Breast
1/2 bag Wacky Mac Pasta (any shape you prefer will work fine!)
Coconut Oil to saute the chicken in
1 32oz carton of Chicken Stock
I buy this awesome Chicken Noodle Soup Seasoning from HEB in the bulk bins. Here is a close up of the label.
First I cut up and saute the chicken breasts in coconut oil until they aren’t pink anymore. They will finish cooking in the soup, so it’s OK if they don’t all get finished.
I added two teaspoons of the Chicken Noodle Soup Seasoning into the chicken about halfway through cooking.
While the chicken is cooking start your pasta water to boil. I added 1 teaspoon of the Soup seasoning to the pasta water as well. Pour the stock or broth into another pot with 3 teaspoons of seasoning and let it come to a boil, then lower heat. Right before the pasta is done, drain but don’t rinse. Add pasta to the stock and toss in the chicken too. Let it simmer for about 5-10 minutes.
That’s it! It was so yummy! The kids ate it all up!

Yum! I think the next blog lunch should be at your place! Where is that meat place you wrote about in the prvieous post? Is is local? I go to Heritage Meats but am always looking for another!
